Chocolate! Always. More when the moon goddess dictates.

Almond.

Bavarian or Boston cream?
Neither. Chocolate eclairs should have chocolate filling. All other baked goods should also have chocolate filling.

Yes, apricots especially.

Yes, hazelnuts and macadamias especially.
